Blueberry Banana Bake

Great as quick healthy breakfast or as a snack on the go. Naturally sweetened with Honey and Banana Great for even picky eaters, my Daughter ate three of these in one sitting!

Blueberry Banana Bake

Ingredients:

Oats
250g
Ground Cinnamon
1 tsp
Baking Powder
1 tsp
Salt
1/2 tsp
Bananas
2 Large (3 Medium)
Oatly Milk
175ml
Honey
3 tbsp
Egg

Vanilla Extract
1 tsp
Blueberries (Fresh or Frozen)

Method:

  1. Preheat oven to 180C (350F/Gas 4) Spray an 8 inch square baking pan with cooking spray and set aside.
  2. In a large mixing bowl add dry ingredients Oats, Baking powder, Cinnamon and Salt Stir until Combined.
  3. In a Separate bowl mix Banana, Vanilla, Eggs, Milk and Honey until fully combined.
  4. Add the dry ingredients to the wet ingredients and mix until everything is well incorporated then gently stir in the blueberries until evenly spread throughout.
  5. Pour in to the baking pan make sure it is evenly spread. Bake for 35 minutes the top should be a golden brown colour.
  6. Remove from oven let cool for 10-15 minutes then cut to desired size servings. Store in the fridge in an airtight container.
