Super yummy and flavorsome Lentil Dahl. We have this at least once a week in my house, it is so good, such a warming and comforting dish. Great if you are on a budget.
Ingredients:
- Red Lentils (rinsed)
- 250g
- Olive Oil
- 1 tbsp
- Red Onion
- 2 Medium
- Garlic
- 4 Cloves
- Ginger (fresh)
- 1 tbsp
- Red Chilli
- 1
- Cumin Seeds
- 1 tbsp
- Coriander seeds
- 1 tbsp
- Mustard seeds
- 1 tbsp
- Turmeric
- 1 tbsp
- Garam Masala
- 1 tbsp
- Smoked Paprika
- 1 tbsp
- Chopped Tomatoes
- 1 400ml Can
- Coconut milk
- 1 400ml Can
- Chickpeas
- 1 400ml Can
- Vegetable Stock
- 500ml
- Salt & Pepper
- To taste
- Lemon
- The juice of 1
- Spinach
- 2 handfuls
- Fresh Coriander
- 30g
Method:
- In a large pan heat the oil over a medium heat. Add the Onion and cook for 5 minutes. Then add the Garlic, Red Chilli and Ginger and cook for another 2 minutes.
- Meanwhile grind the Cumin, Coriander and Mustard seeds in a pestle and mortar then add to the pan along with the Turmeric, Garam Masala and Paprika cook for 1 minute until fragrant.
- Then add the Rinsed Red lentils, Chopped tomatoes, Coconut Milk, Stock and Chickpeas Simmer for 20 minutes on a low heat.
- Add Lemon juice, Fresh Coriander (Reserving some for garnish) and Spinach Cook for another 3 minutes.
- Serve with rice and/or Naan bread.
