Lentil Dahl

Super yummy and flavorsome Lentil Dahl. We have this at least once a week in my house, it is so good, such a warming and comforting dish. Great if you are on a budget.

Lentil Dahl

Ingredients:

Red Lentils (rinsed)
250g
Olive Oil
1 tbsp
Red Onion
2 Medium
Garlic
4 Cloves
Ginger (fresh)
1 tbsp
Red Chilli
1
Cumin Seeds
1 tbsp
Coriander seeds
1 tbsp
Mustard seeds
1 tbsp
Turmeric
1 tbsp
Garam Masala
1 tbsp
Smoked Paprika
1 tbsp
Chopped Tomatoes
1 400ml Can
Coconut milk
1 400ml Can
Chickpeas
1 400ml Can
Vegetable Stock
500ml
Salt & Pepper
To taste
Lemon
The juice of 1
Spinach
2 handfuls
Fresh Coriander
30g

Method:

  1. In a large pan heat the oil over a medium heat. Add the Onion and cook for 5 minutes. Then add the Garlic, Red Chilli and Ginger and cook for another 2 minutes.
  2. Meanwhile grind the Cumin, Coriander and Mustard seeds in a pestle and mortar then add to the pan along with the Turmeric, Garam Masala and Paprika cook for 1 minute until fragrant.
  3. Then add the Rinsed Red lentils, Chopped tomatoes, Coconut Milk, Stock and Chickpeas Simmer for 20 minutes on a low heat.
  4. Add Lemon juice, Fresh Coriander (Reserving some for garnish) and Spinach Cook for another 3 minutes.
  5. Serve with rice and/or Naan bread.
