This soup is packed with lots of flavour. Quick and easy to cook recipe when you feel like being lazy but you want a delicious healthy dinner.
Ingredients:
- Red Onion
- 1
- Garlic
- 2 cloves
- Cumin seeds
- 1 tbsp
- Chilli flakes
- 1/2 tsp
- Carrots (finely sliced or grated)
- 600g
- Red lentils (rinsed)
- 150g
- Vegetable stock
- 1 litre
- Salt and pepper
- to taste
- Coriander
- Fresh to garnish
Method:
- Add olive oil and heat pan.
- Fry onions for 2 minutes then add garlic, Cumin and chilli flakes and continue to fry for another minute.
- Add carrots, lentils and stock simmer for about 15-20 minutes.
- Season with salt and pepper.
- Blend soup until you reach the desired consistency.
- Garnish with coriander and serve with a slice of crusty bread.
