This recipe is a favorite of mine. Quick, easy and filling always a winner in my book. Quick wholesome dinner packed with lots of punchy flavor, Perfect comfort food for cold rainy days.
Ingredients:
- Olive oil
- 1 tbsp
- Red Onion
- 1 large
- Garlic
- 3 cloves
- Leeks
- 4
- Sriracha (Or Harissa)
- 2 tbsp (Or to taste)
- Chopped tomatoes
- 1 400ml Can
- Vegetable stock
- 300ml
- Cannellini beans (Can be substituted for other beans)
- 2 400ml cans
- Lemon
- the juice of
- Coriander (Or Parsley)
- 1 handful
- Salt and Pepper
- Season to taste
Method:
- Heat olive oil in a large pan.
- Fry the onion for 5 minute until softened.
- Add the Garlic and Leek continue frying for another 2 minutes.
- Stir in the Sriracha (Harissa), chopped tomatoes and Vegetable stock. Simmer for 15 - 20 minutes.
- Add the Cannellini beans and continue to simmer for a few minutes until heated through.
- Season, add the lemon juice and chopped Coriander.
Delicious served with a good slice of crusty bread.
