Vegan Chocolate Brownies

Incredibly moreish vegan chocolate brownies! My daughter requested I made her brownies so we made these together. They are very easy to make and eat! Delicious served with fresh fruit or a good scoop of vanilla ice cream if you are feeling a little more indulgent.

Vegan Chocolate Brownies

Ingredients:

Plain flour
280g
Water
300ml
Brown sugar
200g
Salt
1 tsp
Vanilla
1 tsp
Cocoa powder
90g
Coconut oil
100ml
Baking powder
1 tsp
Chopped nuts/ chocolate chips/ dried fruit (Optional)
70g
Icing sugar (Optional)
1 tsp to dust

Method:

  1. Preheat oven to 175 C/350 F/Gas 4 and line baking tray with baking paper.
  2. In a saucepan heat the water and 140g’s of the flour continuously stirring until thickened this should be a gooey consistency this should take a couple of minutes. Then leave to cool completely.
  3. In a large mixing bowl, combine the Sugar, salt, vanilla, cocoa powder and coconut oil. Then add the flour mixture once it has cooled. Mix well.
  4. Add the other half of the flour and the baking powder and chocolate chips or nuts if using.
  5. Pour into baking tray and spread evenly. and cook in the preheated oven for 25 minutes or until fork inserted into the center comes out clean.
  6. Let cool dust with icing sugar and enjoy!!
